As a restaurant, to get a star in the Michelin Guide is the greatest honor and proof of that you are doing great! Aarhus has three different Michelin star restaurants. We sunk our teeth into Restaurant Substans. It was truly a new food experience!

This article is all about the food. The restaurant is marketing them selves as “serving simple food”. I am not sure if I would say that the food was simple but Im no chef. They serve superb food that is ecological and locally produced. Even their vine is ecological and often unfiltered. This is because they want to keep it as clean as they can! One of the vines we got to taste was from a small micro producer in France. The chefs Renè and Nicolas are truly making their dishes to a piece of art. Is it a good thing or a bad thing when you feel sorry to eat the food because it looks so beautiful on the plate?!
The rustic interior at Substans
One of my absolut favorite things about this restaurants (besides the food) is the environment and the ambiance there. It is so simple and rustic, yet nothing is missing. Clean tables without tablecloths and huge windows makes this place look light and spacious. Its simplicity is truly stunning and you could come here to eat without having to rent a tuxedo. In all honesty – you will feel comfortable eating here in sneakers!
It is a combination of strict yet cozy, how odd that even might sound. And even if I thought that the food was fantastic, it is still called “simple”. One thing I reacted on was that I could taste so many different flavors in one bite! And how good must the chef be to serve you lavender, and it does not taste like perfume?! Needless to say… we were truly amazed!
Something for the children
The owners of Substans wanted to learn children about great food that is locally produced. The result is that the restaurant has a children’s day once a year. Parents can buy a ticket for their child and then 30 children come together and learn about food. This is only a once-a-year event and I do believe that they sell out fast so you need to contact the restaurant with your enquiry.
The children will learn more about the food as they are preparing it. After everything is done they all sit down and have a lovely meal together! Man if we had children we would so get them to go there. But we would force them to remember the recipe so that they could cook for us back home :).

Thanks to VisitDenmark we got to experience this magical lunch at Restaurant Substans. I tried my best to write down what we were eating but I might have missed some details and spices. You will have to go there yourselves and eat it to know what we are talking about!

The prices of the menus: Three course meal: 550:-DDK, Four course meal: 700:-DDK (1100:-DDK including vine) and seven course meal for 1000:-DDK or 1500:-DDK if you want vine to.
