Making cheese in Poland
This is one of the greatest ideas and I hope that they stay forever and make loads of money on. I love this place and all that it stands for. This is a place where people come together and create magic! It’s a place that is mostly self-sufficient and they also make some great cheese in the. While visiting Poland you must come and buy some of their products and try out their cheese workshop.

The people that work at this place are also living on the farm. Currently (2017) they are 47 people living there between the ages of 17 to 70 years old. And a lot of them are handicapped or incapacitated. They all live and work together on the farm with all that it has to offer. They have milk cows and the cows provide them with 200 – 250 liters of milk each day. From that milk they make cheese! Both cottage cheese, smoked cheese and aged cheese.

They have a store where they sell their products and even if the opening hours are not great – you really should try to make a visit and support their cause!

Cheeses of Osada Burego Misia

There is a whole room with cheese. Yes, you read it right… A whole room with cheese! The oldest one in the room was from November 2014. However, they are ready to sell after 3 – 4 weeks in the “cheese room”. It takes the workers 4 hours a day to turn and dry the cheeses off and for each week the cheese changes in flavor. A cheese that has aged for 6 months or more costs 70 zloty per kilogram. If the cheese is younger than that it costs 55 zloty per kilogram.

When it comes to the smoked cheese they use the wood from their own apple trees. The cheese is hung inside a smoker and is smoked for about 4 – 12 hours in 30 degrees Celsius. It all depends on the weather on how long it takes to smoke the cheese.

A self-sufficient farm

There are greenhouses and a huge chunk of land where they have different vegetables that they grow. They have cows that provide them with milk and they have chickens that give them eggs. Some of the lands are even adapted and remade to be wheelchair accessible. They are also going to be self-sufficient of electricity soon when the solar panels are in place – how cool is that?

The farm “Osada Burego Misia” has been operating for the last 30 years and they have lived on this farm for 25 years. It’s a great way to let all kinds of people – disabled or not, to have a purpose. To have friends and be part of a great big family. And whats awesome is that we got to be a part of their first workshop ever! Hopefully, that will be a thing that they start with for loads of tourists. It was loads of fun!

Workshop – making cheese

We all felt like we were going into surgery. Dressed up and covered up the group entered the room where the magic was about to happen. And we got to make cottage cheese with nuts. We all had a great time and it was filled with laughter and picture taking of our outfits.

This was the first workshop that the place organized and they were not sure if they were going to have them. Hopefully, we did not scare them from proceeding with the workshop. I believe that the workshop was specially arranged for us and not something they usually do. So what about the cheese that we made? We got to take it with us and have it for breakfast the next day. The verdict? None of us should change our careers because the cheese was completely tasteless. We had a great time but it’s better to leave the cheese making for the pros.

Haha, det ser verkligen ut som operation på gång…! Kul att vara med på osttillverkningen! De (rökta) ostar vi smakat i Polen har ju varit goda … men de var ju säkert tillverkade av proffs då 😉

Haha, it really looks like surgery is whats going on …! Fun to be involved in cheese making! The (smoked) cheeses we tasted in Poland have been tasty … but they were certainly made by professionals then;)

The cheese was not made by us that’s for sure? Polish cheese is very good and then specially oscypek … the Polish goat cheese from Zakopane. Try it with a little cloudberry jam. Just as good as fried halloumi cheese also with cloudberry jam. Mmmmmmmm man that’s good!!!
